You can find out how Tête de Moine is made in the traditional manner.
  • 14:00: Start of the manufacturing process (heating to renneting temperature)
  • 14:30: Renneting (coagulation of the milk with the rennet)
  • 15:00: De-curdling (cutting) then stirring and heating of the grains and whey
  • 15:30: Removal of the cheese and filling the moulds

From May 1, 2021 an exhibition of photos by Mr. Pierre Montavon to accompany the new book, The Universe of Tête de Moine AOP, will be on display at La Maison de la Tête de Moine.

This exhibition of photographs taken from this work conveys the portrait of this character cheese and of the many passionate people who contribute to its success, from dairy shed – via cheese dairies – to Michelin-starred restaurants.
